Using the pulse button, blend all the ingredients (except for the baking powder and coconut) until thoroughly mixed. Once it’s all mixed, add the ground coconut and the baking powder and pulse again until mixed in.
Put half the batter in a nonstick pan, put some vertically sliced bananas on top of the batter, pour the rest, and add the rest of the bananas horizontally sliced, on top.
Bake it at 400 degrees for about 40 minutes, decorate it with ground coconut and cinnamon.
