Gluten free Café Rúbia Cake

Ingredients:

• 1 cup of coconut milk
• 2 tablespoons of coconut oil
• 4 tablespoons of Café Rúbia
• ½ cup of ground coconut
• 1 tablespoon of baking powder
• 4 eggs

Frosting:

• 2 tablespoons of coconut oil
• 3 tablespoons of brown sugar
• 3 tablespoons of Café Rúbia

Instructions:

Blend all the ingredients until mixed evenly. Use a nonstick pan for baking. Bake for 40 minutes at 400 degrees.

For the frosting, heat at low heat all the ingredients until you get a thick syrup consistency.

Pour the frosting over the cake, and decorate with dried fruits and nuts.
